High protein cottage cheese and salami pizza

Because the base is made with cottage cheese, this pizza is naturally higher in protein and lower in carbs than your typical slice.

Pizza night has a way of bringing everyone to the table, but for many of us, it’s also a night when healthy eating goals quietly slide to the side. This high-protein pizza recipe substitutes a traditional dough base for one made from smooth, low-fat cottage cheese and eggs, resulting in a golden, slightly chewy crust. Once baked, it’s topped with rich pizza sauce, melty mozzarella, and savoury slices of salami, finished off with fresh basil for that final burst of colour and freshness. Ingredients

Base: 

  • 250 g LANCEWOOD Low Fat Smooth Plain Cottage Cheese
  • 2 large eggs
  • garlic salt
  • mixed dried herbs

Topping:

  • 60 ml pizza sauce
  • 100 g LANCEWOOD Mozzarella, grated
  • 12 salami slices
  • fresh basil, to garnish

Method

Base:

  1. Preheat the oven to 190°C. Line a baking tray with baking paper, then trace a 20cm diameter circle on it. Turn over the baking paper so that the pencil/pen ink is on the other side.
  2. In a bowl, add the cottage cheese, eggs, garlic salt and mixed herbs. Whisk until smooth.
  3. Pour the mixture onto the baking tray and spread evenly into the traced circle.
  4. Bake for 35-40 minutes, or until golden brown.

 

Topping:

  1. Allow to cool for 10 minutes, then spread pizza sauce almost to the edges, sprinkle with mozzarella cheese and top with salami slices.
  2. Bake for another 5-10 minutes, or until the cheese is melted and golden.
  3. Allow to cool for 5 minutes, then slice and enjoy!
